Located just 15 kilometers south of Srinagar lies Pampore, a historic town situated on the eastern banks of the Jhelum River. Pampore is globally renowned as the 'Saffron Capital of India'. For over 2,000 years, the farmers of Pampore have cultivated Crocus sativus (the saffron crocus), passing down the intricate, labor-intensive farming techniques from generation to generation.

The Magic of Karewa Soil

Why can't you grow premium saffron anywhere else in India? The answer lies in the dirt. Pampore sits on geological formations called 'Karewas'—elevated, plateau-like terraces formed by ancient lake deposits. This highly alkaline, well-drained, loamy soil is incredibly rich in specific minerals. Combined with Kashmir's specific agro-climatic conditions (cold winters, temperate summers, and precise autumn rainfall), it creates the perfect environment for saffron to synthesize maximum crocin (color) and safranal (aroma).

The 21-Day Harvest Window

The saffron harvest is one of the most stressful and beautiful agricultural events in the world. The purple crocus flowers bloom for just 3 weeks, from late October to early November. The flowers must be hand-picked at dawn, before the sun rises fully. If the sun hits the blooming flowers, the UV rays begin to degrade the delicate chemical compounds inside the stigmas, destroying the saffron's potency.

From Flower to Tin: A Labor of Love

It takes an astonishing 150,000 to 170,000 individual flowers to produce just one kilogram of dried Kashmiri saffron. After the flowers are picked, families sit together in their homes to manually strip the three crimson-red stigmas from the center of each flower. This is purely manual labor—no machine in the world is delicate enough to separate the saffron threads without damaging them. This intense labor is why authentic Pampore saffron is the most expensive spice by weight.
